  • Dough ingredients
  • T65 High gluten flour
  • Dried yeast
  • Salt
  • White sugar
  • Ice water
  • Garlic sauce
  • Mashed garlic
  • Chopped dried scallion
  • Butter
  • Salt

    Put 20g melted butter, 5g chopped dried scallion, 30g mashed garlic and half a teaspoon of salt in a bowl, mix them into a garlic sauce, and place the garlic sauce into a pastry bag

    Put 240g ice water, 3g low gluten flour, 3g white sugar, 5g yeast, 3g salt, and 35g high gluten flour into the mixing bowl Note: DO NOT make salt and yeast contact.

    Put on the measuring cup, and mix the ingredients at 30sec/REV4

    Operate the KNEAD mode for 8min for kneading the flour into dough

    Take out the dough, cover it with plastic wrap, and relax it at 40min/30℃

    Divide the relaxed dough into 4 equal parts, roll each of them into a dough strip, and cover each with plastic wrap and then relax it for 20 min

    Knead each of the dough parts into a dough oval, cover it with plastic wrap, ferment it for about 30min until it is 1.5 times in size, and then preheat the oven to 230℃

    Cut a slot the bread in the middle, squeeze the mashed garlic into the slot, and sprinkle water onto the surface

    Bake the bread on the middle/lower layer in the oven for 15 to 20min/230℃ until its surface turns golden yellow
