Preparation

Make shrimp meat stuffing: Rinse 300g shrimp meat and wipe off water from it with kitchen towels

Put 500g water and 1 teaspoon of salt into the mixing bowl

Put on the measuring cup, and boil the water at 4min/120℃/REV1

Add 150g diced winter bamboo shoots

Put on the measuring cup, blanch the bamboo shoots at 1min/120℃/BREV1, take them out, and clean the mixing bowl

Put the blanched diced bamboo shoots into the mixing bowl, put on the measuring cup, smash the bamboo shoots at 10sec/REV7, and take out the smashed ingredients

Put 150g diced carrot into the mixing bowl

Put on the measuring cup, smash the carrot at 10sec/REV7, and take out the smashed carrot

Wipe off water from the shrimp meat, and put the clean shrimp meat and 1 teaspoon of salt in the mixing bowl

Add chopped carrot and bamboo shoots, mix the ingredients at 1min/BREV2.5, take them out, and then clean the mixing bowl

Make dough wrapper: Put 75g wheat starch, 20g potato starch, and 160g boiling water into the mixing bowl

Add 10g lard oil and 90g potato starch

Take out the dough, knead it smooth by hand, and roll the dough into a dough strip which is thick like a rolling pin

Divide the dough strip into small dough parts weighing about 10g each

Press each of the small dough parts flat and roll it into a round dough wrapper

Wrap the stuffing with a wrapper, and pinch it into a half-moon-shaped dumpling
