Preparation

  • step 1

    Make shrimp meat stuffing: Rinse 300g shrimp meat and wipe off water from it with kitchen towels

  • step 2

    Put 500g water and 1 teaspoon of salt into the mixing bowl

  • step 3

    Put on the measuring cup, and boil the water at 4min/120℃/REV1

  • step 4

    Add 150g diced winter bamboo shoots

  • step 5

    Put on the measuring cup, blanch the bamboo shoots at 1min/120℃/BREV1, take them out, and clean the mixing bowl

  • step 6

    Put the blanched diced bamboo shoots into the mixing bowl, put on the measuring cup, smash the bamboo shoots at 10sec/REV7, and take out the smashed ingredients

    Put 150g diced carrot into the mixing bowl

  • step 8

    Put on the measuring cup, smash the carrot at 10sec/REV7, and take out the smashed carrot

    Wipe off water from the shrimp meat, and put the clean shrimp meat and 1 teaspoon of salt in the mixing bowl

    Stir the ingredients at 2min/BREV2.5 until colloid appears

    Add 10g potato starch

    Mix the ingredients at 2min/BREV2.5 to became chewy

    Add 1 teaspoon of powdered sugar, a teaspoon of white pepper powder, 10g lard oil and 10g sesame oil

    Add chopped carrot and bamboo shoots, mix the ingredients at 1min/BREV2.5, take them out, and then clean the mixing bowl

    Make dough wrapper: Put 75g wheat starch, 20g potato starch, and 160g boiling water into the mixing bowl

    Mix the ingredients at 30sec/REV3

  • step 17

    Add 10g lard oil and 90g potato starch

  • step 18

    Mix the ingredients at 1min/REV3

  • step 19

    Take out the dough, knead it smooth by hand, and roll the dough into a dough strip which is thick like a rolling pin

    Divide the dough strip into small dough parts weighing about 10g each

  • step 21

    Press each of the small dough parts flat and roll it into a round dough wrapper

  • step 22

    Wrap the stuffing with a wrapper, and pinch it into a half-moon-shaped dumpling

    Spread the carrot slices on the steamer, and place all the dumplings on them

    Pour 500g water into the mixing bowl

  • step 25

    Put on the measuring cup, and boil the water at 5min/120℃/REV1

  • step 26

    Put on the steamer set and steam the dumplings at 12min/120℃/REV1 Ready for enjoyment
