sticky rice, soaked for 2 hour and drained300g

Preparation

step 1
Place water into mixing bowl.

Line the Steamer with baking paper and weigh soaked sticky rice onto it.

Set Steamer into position, press control knob and steam 45 mins/120°C/speed 1.

Remove the Steamer, add 100g coconut milk and 70g caster sugar onto steamed rice, mix well with scraper.

Divide the rice into 3 equal portions (each approx. 220g). Place the first portion into the mould (14cm X 14cm), press to make it flat.

Add 0.25 tsp pandan essence into the second portion, stir to blend it into the rice. Put it onto the first layer and gently press.

Place steamed rice, water, coconut oil and pandan essence into mixing bowl.

Press control knob and blend 20 sec/speed 8. Pour onto the second layer, covering with cling film and refrigerator for at least 1 hour.

Using a greased knife to cut into small pieces and serve.
