Preparation

  • step 1

    Place 400g rice vermicelli into a bowl and set aside.

    Place water into mixing bowl.

  • step 3

    Insert simmering basket into mixing bowl.

  • step 4

    Place eggs into simmering basket.

    Press control knob and cook 15 mins/120°C/speed 1. Transfer the cooked eggs into a bowl and place in cold water before removing egg shell.

    Add 300g water into mixing bowl. Pour the water onto the rice noodles soak for 15 mins and drain.

    Place dried chillies, dried shrimp, dried anchovies, onion and garlic clove into mixing bowl.

    Add oil into mixing bowl.

    Press control knob and chop 5 sec/speed 10. Scrape down sides of mixing bowl with scraper.

    Press control knob and cook 4 mins/120°C/speed 1. Transfer the half of sauce into a bowl and set aside.

    Add drained rice vermicelli into mixing bowl.

    Press control knob and saute 2 mins/100°C/reverse speed 1.5. Transfer into a bowl and set aside.

    Place remaining sauce, chicken broth, soybean paste into mixing bowl.

    Press control knob and cook 10 mins/100°C/speed 1.

    Add salt, sugar, tomato paste, tamarind paste, Chinese chive into mixing bowl.

    Add bean sprouts and fried bean curds into mixing bowl.

    Press control knob and cook 2 mins/100°C/speed 0.5. Transfer into the bowl and mix with rice noodles.

    Divide into the serving bowl, top with cooked eggs to serve.
