Preparation

Place dried chillies, red chillies, shallots, garlic cloves, lemongrass and galangal,into the mixing bowl

Place ginger,shrimp paste and cooking oil in the mixing bowl,

Chop 30sec/speed 10with the measuring cup, scrape down sides of mixing bowl with spatula

Stir-fry 5min/120 C/Speed 3 with the measuring cup.

Add sugar and salt into the mixing bowl

Cook 15min/95°C/speed 3with the measuring cup.

Use as a base for curries or transfer to 2 airtight jars (400 g each) and store in the refrigerator.
