Ingredients

  • dried chillies, deseeded, soaked to soften

  • fresh red chillies, deseeded

  • shallots,cut half

  • garlic cloves

  • fresh lemongrass, white part only

  • fresh galangal cut in slices (0.5 cm)

  • fresh ginger, cut in slices

  • shrimp paste
    25g
  • cooking oil
    150g
  • salt
    15g
  • sugar
    20g

Preparation

  • step 1

    Place dried chillies, red chillies, shallots, garlic cloves, lemongrass and galangal,into the mixing bowl

  • step 2

    Place ginger,shrimp paste and cooking oil in the mixing bowl,

  • step 3

    Chop 30sec/speed 10with the measuring cup, scrape down sides of mixing bowl with spatula

  • step 4

    Stir-fry 5min/120 C/Speed 3 with the measuring cup.

  • step 5

    Add sugar and salt into the mixing bowl

  • step 6

    Cook 15min/95°C/speed 3with the measuring cup.

  • step 7

    Use as a base for curries or transfer to 2 airtight jars (400 g each) and store in the refrigerator.
