Smashed Avocado Toast with Jammy Eggs

Ingredients

  • garlic cloves
    30g
  • extra virgin olive oil
    2tablespoon
  • eggs (approx. 6)
    300g
  • water
    1000g
  • tomatoes, deseeded and quartered
    350g
  • fresh basil leaves, plus extra to garnish

  • salt, to taste
    0.75teaspoon
  • ground black pepper, plus extra to garnish
    0.25teaspoon
  • breads (approx. 6 slices)

  • ripe avocados, peeled, deseeded and diced
    500g

Preparation

  • step 1

    Place garlic into mixing bowl

  • step 2

    Press control knob and chop 3 sec/speed 8. Transfer to a small bowl and add 2 tbsp olive oil. Stir to combine and set aside.

    Place eggs and water into mixing bowl.

  • step 4

    Press the control knob and cooking 11 min 30 sec/steaming mode.

  • step 5

    Use a slotted spoon to carefully transfer eggs to simmering basket and briefly run cold water over eggs to stop the cooking process.

    Peel eggs while still warm and set aside. Discard water from mixing bowl.

    Place tomatoes, basil, ½ tsp salt and pepper into mixing bowl.

    Press control knob and chop 6 sec/speed 5. Transfer to a sieve and set aside to drain.

    Preheat broiler. Place bread onto a baking sheet and brush with reserved garlic oil. Place under broiler and toast. Meanwhile, make smashed

    Place avocados and ¼ tsp salt into a small bowl and mash with a fork.

  • step 11

    Place toast onto plates and spread with smashed avocado. Top each toast with tomato-basil mixture and a reserved egg.

  • step 12

    Garnish with cherry tomatoes, basil and sprinkle with ground pepper. Serve warm.
