  • Butter
    250g
  • Water
    50g
  • Lemon juice
    5g
  • Egg yolk

Preparation

    Put 250g butter into the main pot

    Melt the butter at 4min/70°C/REV 2.Pour the melted butter into a bowl and clean the main pot

    Install the whisk in the main pot, and add 50g water

    Add 3 egg yolks and 5g lemon juice

    Add 1 teaspoon of ground black pepper and 1 teaspoon salt
