Preparation

  • step 1

    Put 800g chopped pig's feet, 800g clean water, and 20g cooking wine into the main pot

  • step 2

    Add 10g sliced ginger and 20g chopped scallion

  • step 3

    Blanch the materials at 10min/105℃/ B-REV 0.5.Take out the pig's feet and clean the main pot

    Put 10g oil, 2 pieces of star anise, 2 bay leaves, 1 section of cinnamon bark and 5g dried pepper into the main pot

    Add 10g sliced ginger

    Stir fry the materials at 2min/120℃/B-REV 0.5

    Add the blanched pig's feet, 40g salted and fermented soya paste, 20g light soy sauce, 20g dark soy sauce and 20g oyster sauce

    Add 700g clean water

  • step 9

    Boil the materials at 30min/105℃/B-REV 0.5 with the measuring cup

    Add 400g soaked soybeans and 20g rock sugar powder

  • step 11

    Put on the measuring cup, boil the materials at 80min/100℃

  • step 12

    Add 1 teaspoon of salt

  • step 13

    Boil again at 5min/110℃ for reducing the liquid

  • step 14

    Enjoy the braised pig's feet with soybeans when the boiling operation is finished
